Welcome to the site Matt, you might want to go to the introduce yourself section and "Introduce Yourself". Glad to see that you are already planning what you can do to your car - you will definitely fit in round here
With regards to retro fitting the factory sat nav - I would imagine it would be possible in theory (in fact I know it is cause a guy on Mini2 did it , with bits from scrap cars), but I would imagine it would be extremly expensive to do, both in terms of parts and labour.
I'm sure some of the glasgow contingent will be in soon to recommend a good installer in your area - but it isnt too hard if you want to try it yourself, there are some instructions here Removing the stereo
A good site to buy adapters etc from is Mikey the Mini - his site also has lots of DIY instructions for changing speakers etc and some really cool gadgets!!!.
