Toying with the idea of upgrading from 15" alloys on my R56 Cooper, will Cooper S 17" Crown Alloy Wheels with 205 45 17 tyres from a R53 fit, and if so what will be the compromise/benefit of doing so?

Yes.
Pros - potentially look better (in the eye of the beholder), potentially higher dry grip due to wider tyres
Cons - car will accelerate slower and ride worse due to the increased weight of the wheels. Tyres more expensive. Potentially increased chance of aquaplaning due to wider tyre (probably minimal tbf), and also for the same reason potentially worse in snow
Feet were made to fit car pedals. If we were meant to walk, we'd have pogo sticks for legs
Also crown spokes are an R56 design wheel so already designed for the car.

R56 and R53 wheels are interchangeable - the bolts themselves, less so
