I'm looking to buy a pair of 6x9s but am not sure what best rating would be... i've got a 1600w max/900RMS amp and will be running the 6x9s off this.

hmmm.. ok... but how many channels?
How many of these channels will you be using to power the speakers?
Are you bridging any of the channels?
How many watts per channel? (bridged or un-bridged?)
Questions questions questions.... :D:p

Hmm... dunno if that will work too well..
you won't get the best performance out of the speakers unless you run them in stereo..
You really need a channel for each speaker to get the best performance...
Mono channel amps would be best for a single sub I'm sure, but if you're not too worried about getting decent sound quality (possibly missing half the music ;)) it should work ok...
If I'm right, to get the best out of your speakers, you should have an amp which puts out as close to the max power (RMS) of the speakers as possible, without being over it...?
