Ok, the car is telling me as of this morning 800 miles to go for my brake pads.
I had a 2008 Cooper before my S.

My question is, how accurate is the notification?
Will it have more than 800 miles to go and is just being extra careful, or is it basically right on the button for exactly 800 miles?

I have a pretty handy mechanic anyway

Mine told the dealer last time it was in that it needed pads & discs...they're all in great condition, barely any wear so get them checked by someone you trust (or yourself).

I'm not sure if, at 800 miles to go, the car is still using an overall/standard estimate of brake life, or if it has triggered the brake wear sensor. At a 100-200, the sensor has been triggered, but at 800, I'm not sure.

Until the sensor is triggered the car is making a wild-assed guess: once it is triggered, it is quite accurate. And remember it is only one side of each axle - when my front brakes got to 0, the right side (with no wear sensor) was close to zero pad thickness thought the left was at a sensible replacement thickness.

Measure the thickness of pad remaining...

Agree, it's not a difficult job to replace them. Did your mechanic have a look to confirm the amount of meat left on the pad??
